Just West of Sandpoint near the Pend Orielle River, Erik and Nicole have built their dream world. Complete with cattle, pigs, chickens, goats and a sprawling aquaponic greenhouse that churns out fresh and nutritious vegetables all year long, they make magic on a daily basis. You will be greeted with a welcome appetizer and drink before the salumi making demonstration from Chef Seamus. Trained in both Italy and France in the art of making the best cuts of meat, learn from Seamus on how to expertly prepare and enjoy pork in a whole new way. Following the demonstration, you will see the rest of the workings of Genesis Mountain Farm - including benefits and workings of an aquaponic greenhouse. The evening will wrap up with a family-style meal expertly prepared by Chef Seamus using just about all parts of the farm's bounty. This is one memorable experience you will not want to miss.

Chef Seamus Platt is recognized as a culinary expert and visionary with profound connections to both the Seattle area and the artisan world of butchery and meat preservation. Classically trained at the Culinary Institute of America, Platt honed his skills across globally renowned kitchens, boasting experiences in 4-diamond hotels, Relais & Chateaux, and Michelin-starred establishments. From the early days of his career, Platt has been drawn to the art of butchery and salumi making, an interest nurtured through exposure to high-quality, artisan methods from family traditions to traveling across Europe.
